Our research group is interested in exploring the dynamics of nutrients in the body, which is essential for understanding their functions. Our current research focuses on the bioavailability, pharmacokinetics, and functions of micronutrients and phytochemicals, especially the ones that are essential in neonatal development and metabolism. Using in vivo and in vitro models, we investigate how various physiological or diseased states affect the pharmacokinetics and/or bioactivities of those nutrients; we also explore techniques, such as encapsulation, that may improve the bioavailability of the nutrients. We are also interested in studying the nutrition profile and health benefits of various plant foods.
